“Cell-cultured” is being proposed as the potential universal term for cultivated products in the US, as stated in a new paper in npj Science of Food.
An online experiment was conducted by the study to test different terms on product packaging and evaluate consumer and regulatory response in the USA.
Beef filets, beef burgers, chicken breasts, chicken burgers, Atlantic salmon filets, and salmon burgers were the frozen products viewed by 4,385 participants in the experiment.
Only one product was assigned to each participant for review using a single term. By using this approach, we guaranteed that each response was tailored to the individual term, providing a more distinct insight into the perception of each word separately.
Two regulatory criteria were the main focus of the study: the term’s ability to distinguish cell-based products from conventional ones, and its capacity to indicate allergenicity.
In addition, the experiment examined three consumer acceptance criteria: term appropriateness, impact on perception of novel or conventional products, and perception of product safety, healthiness, and nutritional value.
