IFF has been a leader in providing many solutions for meat substitute makers over the years, and this funding is further expanding the opportunities, allowing the company to assist manufacturers in mimicking the look and fibrous texture of traditional whole-muscle meat. HME can provide a better eating experience of plant-based meat and seafood products, offering benefits such as more juiciness and muscle-like texture than other methods. Manufacturers can use HME to create distinctive sensory attributes by comprehending the interactions between various processes, ingredients, flavors, and proteins to enhance taste, texture, and cost-efficiency.

The market value of the plant-based meat substitutes segment is expected to hit $6.4 billion by 2023. This growth pattern is likely to persist with double-digit growth for the following five years. HME technology is crucial, making up about 20 percent of plant-based meat products globally.
