The year 2023 was marked by significant accomplishments and unexpected changes.

Following a year of consolidation in 2022, the restaurant and bar industry experienced significant advancements in 2023. The industry experienced a boost as travel started to make a comeback, driven by the emergence of new international trends. The popularity of Instagram, and especially its feature Reels, skyrocketed as we increasingly turned to our social media feeds for recommendations on dining and tips on wellness. The wellness trends that became widely adopted during the pandemic have persisted and shown no signs of fading away. Our dining experiences were defined by the dominance of regional cuisines and nostalgic flavors.

In 2023, there were several food trends that caught people’s attention. Here are 9 of them.

  • The Rise and Rise of Home Bars

Despite the fact that we returned to bars and restaurants in large quantities, this did not have the effect of reversing a trend that gained momentum during the pandemic, which is the growing popularity of home bars. A significant number of individuals among us have tapped into their inner mixologist by investing in improved home bar equipment and engaging in experimentation with infusions and tonics. The availability of a greater variety of international spirits and wines enabled duty-free shopping to flourish as people took advantage of the opportunity to stock up on these items.

  • From Plant-Based Meat to Lab-Grown Meat

As early as 2020, Singapore took the lead among nations by giving lab-grown meat significant support, aiming to reduce its dependence on imported food. The year 2023 witnessed a significant development as regulators in the United States officially sanctioned the sale of lab-grown chicken, made from animal cells, marking a groundbreaking advancement for the meat industry. Although it might take some time before this becomes popular and starts affecting markets such as India, which has a significant vegetarian population, its impact on the environment is significant.
